They should take about 40-45 minutes in total, depending on size and oven. When the potatoes are deep golden and crispy around the edges, take them out and sprinkle with fine salt immediately. How to make them extra crispy There are three things in particular that make a difference. The potatoes must first be allowed to steam properly after boiling. The less surface moisture, the better they will crisp up in the oven. They also need plenty of space on the baking sheet. If the potatoes are packed tightly together, they will steam more easily rather than fry. And don't be stingy with the oil. It shouldn't be all over the potatoes, but the many uneven edges need to be covered if they are to develop that almost deep-fried crispness.
